Pumpkin Spice Bars

It's that time of year again! Buy your pumpkins, grab a scarf, watch the leaves change, and enjoy the beauty of fall! For the past few years my mom has been making the most delicious fall treat, Pumpkin Spice Bars. They are  fun to make and a great recipe to share with my readers!

I threw a dinner at my sorority last weekend and bought little "pie pumpkins" as table decorations. Not only did the set-up look great, but we have 5 pumpkins we can use for baking adventures. The first recipe my friends and I are going to try is Pumpkin Spice Bars which I will share below!

Pumpkin-Spice Bars with Cream Cheese Frosting 

Bars:
4 eggs
2 cups sugar
1 cups vegetable oil
15 ounces canned pumpkin (or 15 ounces of pumpkin from a real pie pumpkin!)
2 cups all purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
1/2 teaspoon ground sugar
1/4 teaspoon ground cloves

Frosting:
8 ounces cream cheese--softened
1/4 cup of butter--softened
1 tablespoon milk
4 cups powdered sugar
1 tablespoon orange zest

Bars: 
Preheat oven to 350F. Prepare a 15x15 pan with cooking spray. In a large bowl, beat eggs, sugar, oil, and pumpkin with wire whisk until smooth. Stir in flour, baking powder, baking soda, salt, cinnamon, ginger, and cloves. Spread evenly into pan. Bake for 25 to 30 minutes or until a toothpick comes out clean. Remove and cool, about 2 hours.

Frosting:
In medium bowl, beat cream cheese, butter, milk, and vanilla with electric mixer on low speed until smooth. Gradually beat in powdered sugar, 1 cup at a time, continue mixing until smooth. Spread frosting over bars (wait until they are cool!) Sprinkle with orange vest. Cut into desired size. Cover and refrigerate.
